The dominant rice form across West African retail and food service. Top markets: Ghana, Ivory Coast, Mozambique.

Across Ghana, Ivory Coast, and the wider West African coast, parboiled is the dominant rice form. Hardened grain, longer shelf life in humid storage, and golden color suit local cooking traditions. Institutional buyers and food-service operators default to parboiled for sauce-based dishes where grain integrity matters.
For market-specific detail, see the Ghana market page and Ivory Coast market page. Mozambique is also a growing parboiled buyer.
Cleaned paddy is soaked in hot water for 4-6 hours. Water-soluble nutrients move from the bran into the kernel.
Soaked paddy is steamed under pressure. The starch gelatinizes inside the husk, hardening the grain.
Steamed paddy is dried back to 13.5% moisture maximum. Rapid drying prevents fissures.
Dried paddy is dehusked, polished, and graded. The end product is golden / amber, glassy, and harder than white.
Industrial parboiled-rice importers across Ghana and Ivory Coast pair parboiled with 25% white for institutional and food service. 50 kg PP woven bags land at Tema and Abidjan, with custom-printed packaging common for established Ghanaian and Ivorian brands. Smaller volumes route inland to Burkina Faso and Mali through Abidjan, and to Togo and Benin through Tema.

Parboiling gelatinizes the starch and hardens the kernel. The result is a glassy grain with lower surface oil exposure, higher resistance to insect damage, and lower moisture migration in storage. Properly stored parboiled holds quality for 18 months in humid markets, versus 12 months for white.
Sella is the South Asian trade name for parboiled rice. Golden Sella refers to the amber-colored finish that comes from the soak-steam-dry process. Pakistani IRRI-6 parboiled and Indian IR64 parboiled both ship as Golden Sella. The terms are interchangeable in trade contracts.
